1 Eggplant
15 oz can Diced Tomato
at least 4oz Mozzarella Cheese
to taste Grated/Shredded Parmesan Cheese

Directions
Peel eggplant.
Slice and quarter peeled eggplant.
Boil until color changes from light green to greyish (~10 minutes).
Preheat oven to 325Β°
Combine drained eggplant, diced tomatoes, and at least 4oz shredded mozzarella cheese in baking dish.
Cook 20-30 minutes at 325Β°.
